*Editor’s Note: Please be aware that for people with food allergy/s buffet style dining is generally a much higher risk than a plated food as serving utensils and food labels can be mixed up between dishes and people can also drop foods from one serving compartment into  another.

"On the weekend we went to the Watergardens Hotel (VIC) for my mother-in-law’s birthday. I just wanted to give a huge shoutout to Sigar, their head chef. Buffets are a minefield and we usually avoid them like the plague. However, it turned out to be a wonderful experience.

We advised the staff of my son’s allergy (at risk of anaphylaxis to all nuts) and they quickly informed the head chef. He came out and went through every food in the bain marie and told us what was safe. He then told my son to choose what he wanted and it would be plated out the back, in the kitchen from prepared trays that were guaranteed to be safe. When my son said no to dessert, he asked why. My son’s response was that he never eats desserts when he’s out because they are so high risk. Sigar’s response? Sigar told my son which desserts were safe and told him he could safely eat dessert. Again, it was plated out the back and brought to our table. My son (nearly 17 years old) had a smile from ear to ear. He was chuffed he could eat what he wanted, with reassurance and without fear.

Thanks to Watergardens hotel for taking food allergies seriously. Thank you for making my son feel ‘normal’. We appreciate it more than you know."
